Ingredients
- 300 g All-purpose flour
- 50 g Sugar
- 6 g Baking powder
- 1 g Salt
- 4 g Earl Grey tea leaves (finely ground)
- 80 g Unsalted butter (cold, cubed)
- 100 ml Heavy cream (cold)
- 1 Egg (cold)
- 60 g Chocolate chips (semi-sweet or dark)
Steps
- 1
In a food processor, combine the all-purpose flour, sugar, baking powder, salt, and finely ground Earl Grey tea leaves. Pulse a few times to mix.
- 2
Add the cold, cubed unsalted butter to the food processor. Pulse until the butter is broken down into pea-sized crumbs and the mixture looks like coarse sand.
- 3
In a small bowl, lightly whisk the cold egg and heavy cream together.
- 4
Pour the liquid mixture into the food processor and pulse just until a shaggy dough begins to form. Do not overmix.
- 5
Add the chocolate chips and pulse once or twice or fold them in by hand to distribute.
- 6
Turn the dough out onto a lightly floured surface and gently pat it into a disk about 1 inch thick.
- 7
Cut the disk into 6 even wedges and place them on a parchment-lined baking sheet.
- 8
Bake in a preheated oven at 180°C (350°F) for 20-22 minutes until the edges are golden brown.
Notes
The author emphasizes using a food processor to quickly cut the butter and mix the liquid ingredients for a perfect texture. For the best flavor, use high-quality Earl Grey tea leaves.
