Ingredients
- 4.5 cup corn kernels (Use fresh, frozen, or canned; drain canned corn thoroughly.)
- 2 shallots (Medium; finely chopped. Leek (white and green parts), finely chopped, is an alternative.)
- 2 tbsp chives (Finely chopped.)
- 6 spring onions (Also called scallions; chop finely. Can be omitted if using chives, or vice versa.)
- 4 clove garlic (Minced.)
- 1 jalapeño pepper (Minced; deseed if sensitive to heat.)
- 0.25 cup cilantro (Finely chopped; parsley may be substituted.)
- 0.75 cup rice flour
- 0.75 cup stone-ground cornmeal
- 1 tsp ground black pepper (Or more, to taste.)
- salt (To taste; season generously.)
- 1.5 cup water (Add a little at a time; the batter should have some visible liquid and not be thick like pancake batter.)
- 2 tbsp avocado oil (Or another neutral oil, for frying; cooking spray may be used instead for an oil-free version.)
Steps
- 1
Place the corn kernels, shallots, chives, spring onions, garlic, cilantro, and jalapeño in a bowl. Mix to combine.
- 2
Add the cornmeal, rice flour, salt, and ground black pepper. Mix thoroughly, checking that no dry flour remains at the bottom of the bowl.
- 3
Begin adding the water a little at a time, mixing as you go. Use about 1½ cups; stop when the batter is not thick like pancake batter and some liquid is still visible in the bowl.
- 4
Heat a cast-iron or non-stick skillet and coat the bottom with the avocado oil. For the oil-free option, spritz the skillet with cooking spray instead.
- 5
Use a spoon or cup measure to drop batter into the skillet. Use its bottom to shape each fritter and carefully flatten it into a thin, pancake-like round so it can cook through.
- 6
When the edges begin to dry and look golden brown, carefully flip the fritters with a spatula.
- 7
Cook for a couple more minutes, then transfer the fritters to a plate.
Notes
Makes approximately 20 fritters, about 3 inches each. Serve for breakfast or as a snack, with a creamy sauce or vegan mayonnaise. Refrigerate in an airtight container for up to six days. To freeze, arrange fritters side by side on a baking sheet to flash-freeze, then transfer to a freezer-safe container for up to four months. The source does not specify skillet heat level or an exact cooking time per batch.
