Ingredients
- 3 Eggs (size M) (separated)
- 150 g Skyr
- 50 g Flour
- 18 g MORE protein pudding powder (or regular pudding powder)
- 6 g Baking powder
- Chunky Flavour Vanilla Perfection (a little; alternatively, sweetener to taste)
- Sweetener (to taste; alternative to Chunky Flavour Vanilla Perfection)
- Oil spray (a little, for frying)
- Powdered sugar (optional, for serving)
Steps
- 1
Separate the eggs and beat the egg whites with a mixer until stiff peaks form.
- 2
In a bowl, whisk the egg yolks, skyr, flour, protein pudding powder, baking powder, and Chunky Flavour or sweetener into a smooth batter.
- 3
Carefully fold the beaten egg whites into the batter to keep the mixture light and airy.
- 4
Lightly grease a pan with oil spray. Pour in the batter and cover the pan with a lid.
- 5
Cook over medium heat for about 4 minutes, until the underside is golden brown and the batter is firm enough to turn.
- 6
Turn the Kaiserschmarrn, cover again, and continue cooking on the second side for about 4 minutes, until cooked through. The exact time depends on the thickness.
- 7
Tear the Kaiserschmarrn into pieces using two forks or a spatula.
- 8
Fry the pieces for about 3 more minutes until golden brown.
- 9
Dust with powdered sugar if desired and serve warm.
