Ingredients

  • 600 г chicken breast (2 pcs.)
  • 6 г salt (1% of the meat weight)
  • 0.5 tsp smoked paprika
  • 1 tsp dried garlic
  • 1 tsp dried parsley
  • ground black pepper (to taste)
  • 2 tsp vegetable or olive oil
  • parchment paper (for wrapping each breast)

Steps

  1. 1

Sprinkle the chicken breasts evenly with salt on all sides and gently rub it in with your hands.

  2. 2

Transfer the breasts to a container and refrigerate for 1 hour.

  3. 3

In a small bowl, combine the smoked paprika, dried garlic, dried parsley, black pepper, and oil.

  4. 4

Remove the chicken breasts from the refrigerator. Do not rinse off the salt.

  5. 5

Thoroughly coat the meat on all sides with the oil and spice mixture.

  6. 6

Wrap each breast in parchment paper.

  7. 7

Bake in an air fryer at 180 °C for approximately 25–30 minutes.

  8. 8

After cooking, leave the breasts in the parchment until completely cool.

  9. 9

Without unwrapping the parchment, transfer the breasts to a container and refrigerate overnight.

  10. 10

In the morning, slice the pastrami thinly.

Notes

The author notes that the pastrami can be served in breakfast toast, added to Caesar salad or pasta salad, or served with grains or pasta with pesto. Vegetable or olive oil can be used.
