Ingredients
- 2 eggs
- 130 g sugar
- 30 g neutral-flavored vegetable oil
- 160 g kefir
- 160 g flour
- 0.67 tsp baking soda (2/3 tsp)
- 25 g cocoa powder
- 0.67 tsp baking powder (2/3 tsp)
- 375 g sour cream, 25–30% fat (Source specifies: 350–400 g.)
- 200 g heavy cream, 33% fat (Must be cold.)
- 40 g powdered sugar (Source specifies: 30–50 g, to taste.)
Steps
- 1
Whisk the eggs with the sugar. Pour in the vegetable oil and kefir, and mix. Add the baking soda and mix again.
- 2
In a separate bowl, combine the flour, cocoa powder, and baking powder.
- 3
Sift the dry mixture into the wet mixture and whisk thoroughly until you have a smooth batter.
- 4
Pour the batter into an 18–20 cm cake pan. If using an adjustable cake ring, wrap the bottom with foil. For a pan with a removable bottom, line it with parchment paper; otherwise, the batter may leak out.
- 5
Bake the sponge at 170 °C for approximately 40–50 minutes. Check for doneness with a toothpick: it should come out of the sponge clean and dry.
- 6
Remove the sponge from the pan, place it top-side down, and leave it to cool.
- 7
For the frosting, whip the cold heavy cream with the powdered sugar to medium peaks: start at low speed and gradually increase to medium-high. Do not whip at maximum speed, or you may overwhip the cream.
- 8
Whip the sour cream separately until thickened, then fold it into the whipped cream.
- 9
For assembly, use a cake ring or the pan in which the sponge was baked, as the frosting is unstable and may leak. In the pan, excess liquid will soak into the cake layers.
- 10
Trim off the top of the sponge. Cut the remaining sponge into 3 layers.
- 11
Spread frosting between the layers. Crumble the trimmed top and sprinkle the crumbs over the top of the cake.
- 12
Leave the cake to rest in the refrigerator for at least 6–8 hours.
Notes
For assembly, it is recommended to use a pan or cake ring because the frosting is not very stable. Resting time — at least 6–8 hours in the refrigerator.
