Ingredients

  • 2 large chicken thighs (Cut into small bite-sized pieces; edible meat estimated at approximately 300 g total.)
  • 2 large garlic cloves (Minced.)
  • 2 Thai red chillies (Prepared according to preference; finely chopped or sliced.)
  • 1 tbsp fresh ginger (Grated.)
  • Thai basil (One large handful; stir through at the end and allow to wilt.)
  • 60 g raw jasmine rice (Cook and serve as white jasmine rice.)
  • 1 egg (Fried until crispy; approximately 50 g edible weight.)
  • oil (A little oil for frying the aromatics and egg.)
  • 2 tbsp oyster sauce (For the sauce.)
  • 1.5 tbsp soy sauce (For the sauce.)
  • 2 tbsp sriracha (For the sauce.)
  • 1 tsp fish sauce (For the sauce.)

Steps

  1. 1

Prepare the ingredients: mince the garlic, grate the ginger, prepare the Thai red chillies, and cut the chicken thighs into small bite-sized pieces.

  2. 2

Cook the jasmine rice according to the package directions so it is ready to serve with the chicken.

  3. 3

Heat a pan with a little oil. Add the minced garlic, prepared chillies, and grated ginger, and fry for about 30 seconds, until fragrant.

  4. 4

Add the bite-sized chicken pieces to the hot pan. Cook over high heat until the chicken is nicely browned and cooked through.

  5. 5

Add the oyster sauce, soy sauce, sriracha, and fish sauce. Toss everything together, then turn down the heat and cook for another 1–2 minutes, until the sauce reduces and coats the chicken.

  6. 6

Stir through the large handful of Thai basil and allow it to wilt into the sauce.

  7. 7

Fry the egg in a little oil until crispy.

  8. 8

Serve the Thai basil chicken over the cooked white jasmine rice and top with the crispy fried egg.

Notes

The source does not specify exact quantities for the oil or Thai basil, nor an exact cooking time for the rice or fried egg. Ensure the chicken is fully cooked before serving.
