Ingredients
- 40 g Chia seeds
- 300 g Unsweetened almond drink
- 1 tsp Vanilla essence
- 1 tsp Agave syrup
- 100 g Assorted red berries
- 1 tbsp Grated coconut
- Mint leaves (A few leaves, for garnish)
Steps
- 1
Put the unsweetened almond drink, vanilla essence, and agave syrup into the Thermomix or other mixing bowl.
- 2
Mix for 30 seconds at speed 3 to integrate the almond drink, vanilla, and agave syrup.
- 3
Add the chia seeds and mix for 20 seconds at speed 2.
- 4
Divide the mixture between two glasses. After 5 minutes, stir the mixture in each glass by hand so the chia seeds do not clump.
- 5
Refrigerate the glasses for at least 4 hours, or overnight, until the pudding sets.
- 6
Top the set pudding with the assorted red berries and grated coconut.
- 7
Garnish with the mint leaves and serve cold.
Notes
The source recommends stirring after the first few minutes to avoid lumps. It also notes that the pudding can be sweetened to taste with fruit instead of additional syrup. The structured recipe lists a 10-minute preparation/cooking time, while the pudding still requires at least 4 hours of refrigeration, or overnight, to set.
