Ingredients
- 350 g chicken breast (cut into cubes)
- 1 tbsp soy sauce (for the marinade)
- 1 tsp ketjap manis (for the marinade)
- 1 tsp honey (for the marinade)
- 1 garlic (finely chopped)
- 1 tsp fresh ginger (grated)
- 0.5 tsp white pepper
- 1 tbsp cornstarch (for the marinade)
- 1 tsp oil (for the marinade)
- 4 tbsp soy sauce (for the sauce)
- 2 tbsp oyster sauce (optional)
- 2 tbsp honey (for the sauce)
- 2 tbsp ketjap manis (for the sauce)
- 1 tsp vinegar
- 2 tsp cornstarch (for the slurry)
- 2 tbsp water (for the slurry)
- 1 onion (roughly chopped)
- 1 red bell pepper (roughly chopped)
- 1 green bell pepper (roughly chopped)
- 70 g cashews
- rice (for serving)
- sesame seeds (optional, for garnish)
- green onions (optional, for garnish)
Steps
- 1
Cut the chicken breast into cubes and combine in a bowl with 1 tbsp soy sauce, 1 tsp ketjap manis, 1 tsp honey, the finely chopped garlic, grated ginger, white pepper, 1 tbsp cornstarch, and 1 tsp oil.
- 2
Marinate the chicken for 10 to 30 minutes; the longer the chicken marinates, the more flavor it will absorb.
- 3
Meanwhile, make the sauce by mixing the 4 tbsp soy sauce, oyster sauce, 2 tbsp honey, 2 tbsp ketjap manis, and vinegar in a small bowl.
- 4
In a separate small bowl, make the cornstarch slurry by mixing 2 tsp cornstarch with 2 tbsp water. Set both aside.
- 5
Cut the onion, red bell pepper, and green bell pepper into rough pieces.
- 6
Briefly toast the cashews in a dry pan until lightly browned, then remove them from the pan.
- 7
Heat a pan over high heat and cook the marinated chicken pieces until golden brown and cooked through. Remove the chicken from the pan and set aside.
- 8
In the same pan, briefly sauté the onion and bell peppers so they remain slightly crisp.
- 9
Return the cooked chicken and toasted cashews to the pan with the vegetables.
- 10
Pour the prepared sauce and cornstarch slurry into the pan.
- 11
Stir everything well over medium heat until the sauce thickens and forms a glossy coating around the chicken and vegetables.
- 12
Serve the cashew chicken immediately with rice and garnish as desired with sesame seeds and sliced green onions.
Notes
The oyster sauce is optional but adds extra depth to the sauce. For the best flavor, you can also marinate the chicken overnight.
