Ingredients
- 130 г 5% cottage cheese (Preferably use cottage cheese with a very smooth texture; pressed or farmer's cottage cheese works well.)
- 90 г Dulce de leche
- 25 г Butter (At room temperature.)
- 25 г 15% sour cream
- 30 г Dark chocolate (Finely chop to create crumbs.)
- Cheesecloth (For lining and covering the mold.)
- Disposable paper cup (With a capacity of 250 ml; cut out the bottom of the cup.)
- Weight for pressing (The author used a cup filled with buckwheat.)
Steps
- 1
Prepare the cottage cheese: it should have a very smooth texture. Bring the butter to room temperature in advance.
- 2
Place the cottage cheese, dulce de leche, softened butter, and sour cream in one container. Blend until completely smooth.
- 3
Finely chop the dark chocolate to create small crumbs.
- 4
Add the chocolate crumbs to the cheese mixture and stir with a spoon or silicone spatula until evenly distributed.
- 5
Cut out the bottom of a 250 ml disposable paper cup. Line the cup with cheesecloth and fill it with all the cheese mixture.
- 6
Cover the top of the dessert with cheesecloth, place a weight on it—for example, a cup filled with buckwheat—and leave it in the refrigerator overnight.
- 7
After it has matured in the refrigerator, remove the portion-sized dessert from the mold and serve.
Notes
This recipe requires no heat treatment. The maturation time is stated as “overnight”; approximately 12 hours. The quantities make one portion-sized dessert in a 250 ml cup.
