Ingredients

  • 285 g all-purpose flour
  • 0.25 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tbsp cornstarch
  • 1 cup dark brown sugar
  • 3 tbsp granulated sugar
  • 1 egg and egg yolk (Cold; use 1 whole egg plus 1 additional egg yolk.)
  • 1 cup unsalted butter (Cold and cubed.)
  • 1 tbsp vanilla bean paste
  • 1 cup semi-sweet chocolate chips
  • 6 tbsp Nutella (Scoop onto parchment and freeze until firm.)
  • salt (A pinch.)
  • 0.5 tsp espresso powder or instant coffee (The source refers to both espresso powder and instant coffee.)

Steps

  1. 1

Line a small plate with parchment paper. Scoop 6 tablespoons of Nutella onto the parchment, keeping the portions separate, and freeze until firm.

  2. 2

Preheat the oven to 350°F (175°C).

  3. 3

Place the cold, cubed butter in a bowl or stand mixer. Beat on high for about 2 minutes, until creamy.

  4. 4

Add the dark brown sugar and granulated sugar to the butter. Beat on high for 2–3 minutes, until well combined.

  5. 5

Add the cold egg, cold egg yolk, and vanilla bean paste. Mix on high for 3–4 minutes, until everything is well incorporated.

  6. 6

In a separate bowl, combine the all-purpose flour, baking powder, baking soda, salt, cornstarch, and espresso powder or instant coffee.

  7. 7

Gradually add the dry ingredients to the wet mixture, mixing as they are incorporated.

  8. 8

Add the semi-sweet chocolate chips and mix only until just combined. Do not overmix the dough at this stage.

  9. 9

Scoop the dough into large balls, making about 6–7 total.

  10. 10

Flatten each dough ball slightly. Place a frozen Nutella scoop in the center, wrap the dough completely around it, and roll the dough into a tall ball shape.

  11. 11

Place the filled cookie dough balls several inches apart on a baking sheet.

  12. 12

Bake at 350°F (175°C) for 25–30 minutes, until the tops are golden and crispy while the centers remain chewy and soft.

  13. 13

Let the cookies cool completely before serving.

Notes

The source does not specify the exact freezing duration for the Nutella or whether the baking sheet should be lined. It also gives both “espresso powder” and “instant coffee” for the same ingredient; use the one available.
