Ingredients

  • 2 lemons (cut into pieces)
  • 200 g sugar
  • 50 ml milk
  • 60 ml vegetable oil
  • 2 eggs
  • 250 g flour
  • 10 g baking powder
  • 10 g vanilla sugar
  • 2 tbsp powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)

Steps

  1. 1

Cut two lemons into small pieces and place them into a blender.

  2. 2

Add 200 grams of sugar to the blender with the lemons.

  3. 3

Pour in 50 milliliters of milk and 60 milliliters of vegetable oil.

  4. 4

Crack two eggs into the blender and blend the mixture until smooth.

  5. 5

In a separate large bowl, combine 250 grams of flour, 10 grams of baking powder, and 10 grams of vanilla sugar.

  6. 6

Pour the blended lemon mixture into the dry ingredients and whisk until a smooth batter forms.

  7. 7

Pour the batter into a greased or lined baking pan.

  8. 8

Bake in a preheated oven (typically 180°C/350°F) until a toothpick inserted comes out clean, approximately 35-40 minutes.

  9. 9

While the cake is baking, prepare the glaze by mixing 2 tablespoons of powdered sugar with 1 tablespoon of lemon juice until smooth.

  10. 10

Once the cake has cooled slightly, pour the lemon glaze over the top before serving.

Notes

Some users find that using whole lemons can result in a slightly bitter taste from the pith; you can peel the lemons or remove the white pith before blending if you prefer a milder flavor.
