Ingredients
- 2 tbsp Olive oil
- 1 tbsp Butter
- 3 Onions (large, thinly sliced)
- 1 tsp Sugar
- 4.5 Garlic (cloves, finely chopped; source gives 4–5 cloves)
- 1 tbsp All-purpose flour
- 3.5 cup Water (source gives 3–4 cups)
- 1 Bay leaf
- 1 tsp Dried thyme or mixed herbs (choose dried thyme or mixed herbs)
- 0.5 tsp Black pepper (ground)
- Salt (to taste)
- Mozzarella cheese (amount unspecified; use a little over the soup, then more over the toast)
- 2 slices Toasted bread
Steps
- 1
Heat the olive oil and butter in a pot over low-medium heat.
- 2
Add the sliced onions, sugar, finely chopped garlic, salt to taste, and ground black pepper. Cook over low-medium heat until the onions are deeply caramelized.
- 3
Stir in the flour and cook for 1 minute.
- 4
Gradually pour in the water, then add the bay leaf and dried thyme or mixed herbs.
- 5
Bring the soup to a boil, then reduce the heat and simmer for 10–15 minutes, until slightly thickened and flavorful.
- 6
Remove and discard the bay leaf.
- 7
Transfer the soup to an oven-safe bowl. Add a little mozzarella, place the toasted bread on top, and cover with more mozzarella.
- 8
Bake at 200°C for 8–10 minutes, until the cheese is melted and lightly golden on top.
- 9
Serve hot.
Notes
The source does not specify the quantity of mozzarella or how to prepare the toasted bread beyond calling for two slices of toasted bread. The transcript describes the soup as vegetarian and made without wine.
