Ingredients

  • 285 g All-purpose flour
  • 0.25 tsp Baking soda
  • 0.5 tsp Baking powder
  • 1 tbsp Cornstarch
  • 1 cup Dark brown sugar
  • 3 tbsp Granulated sugar
  • 1 Egg (Cold)
  • 1 Egg yolk (Cold)
  • 1 cup Unsalted butter (Cold and cubed)
  • 1 tbsp Vanilla bean paste
  • 1 cup Semisweet chocolate chips
  • 6 tbsp Nutella (Freeze in scoops until firm)
  • Salt (A pinch)
  • 0.5 tsp Espresso powder (The source also describes this as instant coffee)

Steps

  1. 1

Line a small plate with parchment paper. Scoop the 6 tablespoons of Nutella onto the parchment in portions and freeze until firm.

  2. 2

Preheat the oven to 350°F (175°C).

  3. 3

Place the cold, cubed butter in a bowl or stand mixer. Beat on high for about 2 minutes, until creamy.

  4. 4

Add the dark brown sugar and granulated sugar to the butter. Beat on high for 2–3 minutes, until well combined.

  5. 5

Add the cold egg, cold egg yolk, and vanilla bean paste. Mix on high for 3–4 minutes, until everything is well incorporated.

  6. 6

In a separate bowl, combine the flour, baking powder, baking soda, salt, cornstarch, and espresso powder. Mix until evenly distributed.

  7. 7

Gradually add the dry ingredients to the butter mixture, mixing as you go.

  8. 8

Add the chocolate chips and mix only until the dough is just combined. Do not overmix at this stage.

  9. 9

Scoop the dough into approximately 6–7 large dough balls.

  10. 10

Flatten each dough ball slightly. Place a frozen Nutella scoop in the center, then wrap the dough around it completely and roll it into a tall ball shape.

  11. 11

Place the filled dough balls several inches apart on a baking sheet.

  12. 12

Bake for 25–30 minutes, until the tops are golden and crispy while the centers remain chewy and soft.

  13. 13

Let the cookies cool completely before serving.

Notes

The source does not specify whether the baking sheet should be lined or whether the cookies should be baked in batches. Yield is described as approximately 6–7 large cookies; servings are estimated as 6.
