- 0.5 cup salted butter, browned
- 0.5 cup brown sugar
- 0.25 cup granulated sugar
- 1 large egg (room temperature)
- 0.25 cup plain Greek yogurt
- 1 tbsp vanilla paste
- 2 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 0.5 tsp salt
- 2 tsp cinnamon
- 1 tbsp instant espresso powder (The author used Nescafé Gold Blonde)
- 2 shots espresso (double shot)
- 2 tbsp brown sugar (about)
- 1 tsp vanilla paste
- 8 oz mascarpone
- 1 cup heavy cream (cold)
- 0.333 cup powdered sugar (Add to taste)
- 1 tsp vanilla
- 1 tsp instant espresso
- cocoa powder (For dusting the top; amount not specified)
Steps
- 1
Brown the butter, then set it aside to cool slightly.
- 2
In a large bowl, whisk the mashed bananas with the browned butter.
- 3
Add the brown sugar, granulated sugar, egg, Greek yogurt, vanilla paste, and instant espresso powder. Mix until smooth.
- 4
Fold in the flour, baking powder, baking soda, salt, and cinnamon just until combined. Do not overmix.
- 5
Pour the batter into a prepared loaf pan.
- 6
Bake at 375°F (190°C) for 5 minutes.
- 7
Reduce the oven temperature to 350°F (175°C) and bake for another 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- 8
While the bread bakes, pull a double shot of espresso.
- 9
Stir about 2 tablespoons brown sugar and 1 teaspoon vanilla paste into the espresso until the sugar dissolves.
- 10
When the banana bread comes out of the oven, poke holes all over its top with a skewer or toothpick.
- 11
Slowly pour the espresso mixture over the loaf, allowing it to soak in.
- 12
Whip the mascarpone, cold heavy cream, powdered sugar, vanilla, and instant espresso together until thick and fluffy.
- 13
Once the banana bread has cooled completely, spread the frosting over the top.
- 14
Finish by dusting cocoa powder over the frosting.
Notes
The loaf must cool completely before frosting. The source does not specify the loaf-pan size or a measured quantity of cocoa powder; prepare the pan as desired.
