Ingredients

  • 100 g walnuts (Toasted and finely chopped)
  • 1 parsley (Small bunch, finely chopped)
  • 1 coriander (Small bunch, finely chopped)
  • 1 garlic (Clove, finely grated)
  • 2 tbsp red wine vinegar
  • 2 tbsp honey
  • 120 ml olive oil (Maybe a little more)
  • salt (To taste)
  • black pepper (To taste)

Steps

  1. 1

Lightly toast the walnuts in a dry pan or oven for 3–5 minutes, until golden brown. Allow them to cool slightly.

  2. 2

    Finely chop the cooled walnuts.

  3. 3

In a mixing bowl, combine the chopped walnuts with the finely chopped parsley and coriander, and the finely grated garlic.

  4. 4

Add the red wine vinegar, honey and olive oil. Mix well.

  5. 5

Add salt and black pepper to taste, adjusting until the flavors are balanced. Add a little more honey if you prefer it sweeter.

  6. 6

Let the gremolata rest for 15 minutes before serving so the flavors can meld.

Notes

The author recommends serving with roasted carrots (sometimes with caraway seed), lightly spiced roasted cauliflower, or cheese. The transcript calls this gremolita; the written recipe uses “gremo.”
