Ingredients
- 500 g Carrots (Peeled; if necessary, peel slightly more thickly at the thicker parts near the bottom, and trim the ends diagonally.)
- 30 g Butter
- 3 EL Honey
- 1 Organic orange (Use the juice and some zest; the peel should be untreated.)
- 350 ml Water (Approximately 300–400 ml; use enough to fully or almost cover the carrots.)
- Salt (To taste.)
- Pepper (To taste.)
Steps
- 1
Peel the carrots. If the lower ends are thicker, run the peeler over those areas several times if necessary. Trim the tops slightly and cut the ends diagonally.
- 2
Place the carrots, butter, salt, pepper, and honey in a saucepan or large frying pan.
- 3
Add some orange zest and the juice of the organic orange to the carrots.
- 4
Pour in cold water until the carrots are fully or almost covered. Approximately 300–400 ml of water is used in total.
- 5
Bring the liquid to a boil. Optionally, place a piece of parchment paper directly on the carrots as a cartouche so they cook evenly and the liquid reduces in a controlled manner.
- 6
Simmer the carrots for 10–15 minutes, until tender or perfectly cooked and the liquid has mostly reduced. The carrots should be beautifully glossy and glazed; in the video, this was achieved after approximately 12 minutes.
Notes
The recipe specifies approximately 300–400 ml of water; in the video, enough cold water is used to cover the carrots. The cooking time depends on the size and thickness of the carrots. A parchment-paper cartouche is mentioned in the video as an optional technique.
