Ingredients
- 5 tbsp Chilli flakes
- 0.5 tbsp Chilli powder
- 1 tbsp Salt
- 1.5 tbsp Sesame seeds (The source writes “1+1/2 half tablespoon”; interpreted as 1½ tablespoons.)
- 0.5 tbsp White pepper powder (Described as a gamechanger.)
- 1 tbsp Garlic powder
- 2 tbsp Spring onions
- 1 tbsp Sugar
- 2 tbsp Soy sauce
- 1 tbsp Vinegar
- 0.5 cup Garlic (Finely chopped; approximately 15–20 cloves.)
- 1 Onion (One large onion, chopped.)
- 5 Coriander stems (Use 4–5 stems; lightly crushed.)
- 1 Bay leaf
- 2 Star anise
- 1 Cinnamon stick (One medium-sized stick.)
- 3 Cloves
- 4 Black peppercorns (Use 3–4 peppercorns.)
- 1.5 cup Neutral oil (The creator used groundnut oil; add to cold oil. The source says the cup was filled to the brim.)
Steps
- 1
Place the chilli flakes, chilli powder, salt, sesame seeds, white pepper powder, garlic powder, spring onions, and sugar in a bowl. Add the soy sauce and vinegar, and stir to combine into the chilli mixture.
- 2
Put the chopped garlic, chopped onion, lightly crushed coriander stems, bay leaf, star anise, cinnamon stick, cloves, and black peppercorns into the measured cold oil in a pan.
- 3
Heat the pan over the lowest heat, preferably on the smallest burner. Let the onion and garlic slowly release their flavor and cook for about 15–20 minutes, until browned and approximately 80% done.
- 4
Remove the whole aromatics—coriander stems, bay leaf, star anise, cinnamon, cloves, and black peppercorns—from the oil. Keep the browned onion and garlic for the finished chilli oil.
- 5
Reheat the infused oil, then carefully pour it over the chilli mixture in the bowl so the spices are infused by the hot oil.
- 6
Add the crispy browned onion and garlic to the chilli oil and stir to distribute them.
- 7
Transfer the chilli oil to an airtight container for storage and use as a condiment.
Notes
The source specifically emphasizes starting with cold oil and using the lowest heat so the aromatics release flavor gradually. Remove the whole aromatics before serving; only the browned onion and garlic are retained. Storage duration is not specified, only that it can be kept in an airtight container.
