Ingredients

  • 90 g Coffee (Coarse grind; can be ground coffee for a moka pot or freshly ground)
  • 900 ml Cold water (The ratio is 10g of coffee per 100ml of water)
  • Citrus peels (Optional, to add aromas)

Steps

    Prepare the coffee with a fairly coarse grind if grinding at home, or use commercial ground coffee for a moka pot.

    In a bottle or large container, add 10 grams of coffee for every 100 milliliters of cold water (for example, 90g of coffee for 900ml of water).

    Optionally, add citrus peels if you wish to explore other aromatic nuances.

    Close the bottle, shake well to ensure all the coffee is in contact with the water, and store in the refrigerator.

    Let it cold steep for a period of 12, 16, or up to 24 hours.

    Remove the bottle from the refrigerator. Most of the coffee grounds will have risen to the surface; remove this compact layer with a spoon.

    Prepare a homemade filtering system by placing a regular strainer and, on top of it, two pieces of paper towel placed in a cross pattern.

    Pour the coffee through the paper towel to filter it. If a cleaner result is desired, more layers of paper can be added.

    Once filtered and clarified, use a funnel to re-bottle the coffee.

    Serve black, with ice, or with a bit of textured milk.

Notes

Filtering with paper towels in a cross pattern is a quick and effective alternative if specific coffee paper filters are not available. The intensity of color and aroma after 24 hours is exceptional.
