Ingredients

  • 400 g Plain wheat flour
  • 220 g Lukewarm milk
  • 20 g Fresh yeast
  • 8 g Salt
  • 2 g Sugar
  • 40 g Lard
  • Water (For spraying before baking.)
  • Poppy seeds (Optional, for topping.)
  • Maldon salt (Optional, for topping.)
  • Crushed caraway seeds (Optional, for topping.)
  • Sesame seeds (Optional, for topping.)

Steps

  1. 1

Place the plain flour, lukewarm milk, yeast, salt, sugar, and lard in the bowl of a stand mixer or a metal mixing bowl.

  2. 2

Knead the dough for approximately 10 minutes in a stand mixer, or about 30 minutes by hand.

  3. 3

Shape the dough into a ball and leave it to rise until it has approximately doubled in volume.

  4. 4

Turn the risen dough out onto a work surface, fold it briefly, and shape it into a large loaf.

  5. 5

Gradually divide the loaf in half until you have equally sized pieces; alternatively, weigh the individual pieces so that the rolls are the same size.

  6. 6

Shape each piece into a ball.

  7. 7

Roll each ball out with a rolling pin into a triangle with three distinct points.

  8. 8

Roll up the dough from the wide side toward the tip of the triangle.

  9. 9

Roll the shaped bread roll briefly once more to tighten it so that it does not unravel during proofing and baking.

  10. 10

Dust the rolls lightly with flour, cover them with a kitchen towel, and leave them to proof for 30 to 40 minutes.

  11. 11

Spray the proofed rolls with water from a spray bottle.

  12. 12

Sprinkle them to taste with poppy seeds and Maldon salt, or with crushed caraway seeds or sesame seeds.

  13. 13

Bake in a preheated oven at 200 °C with 20% steam for approximately 12 minutes.

  14. 14

Allow the baked rolls to cool on a wire rack or in a proofing basket.

Notes

The author states that the dough can also be prepared in the evening and left to rise overnight so that the rolls are fresh in the morning. The baking time may vary slightly depending on the particular oven.
