- 30 g Cornstarch (Corn starch)
- 100 g Unsweetened cocoa powder (For the cake)
- 3 tsp Baking powder
- 0.5 tsp Salt (For the cake)
- 200 g White sugar
- 100 g Brown sugar
- 100 ml Vegetable oil
- 230 g Heavy cream
- 3 Eggs (Also add 1 additional egg yolk)
- 1 Egg yolk (In addition to the 3 whole eggs)
- 125 ml Milk (For the batter)
- 2 tsp Vanilla (For the cake)
- 240 ml Hot coffee
- 200 g Unsalted butter (At room temperature, for the frosting)
- 100 g Powdered sugar (For the frosting)
- 1 tsp Vanilla (For the frosting)
- Salt (A pinch, for the frosting)
- 150 ml Milk (Warm, for the frosting)
- 30 g Cocoa powder (For the frosting)
- 250 g Dark chocolate (Melted and cooled slightly)
Steps
- 1
Preheat the oven to 180 ยฐC and prepare the pans. The recipe specifies a 20 cm pan.
- 2
Sift together the flour, cornstarch, unsweetened cocoa powder, baking powder, and salt.
- 3
Add the white sugar and brown sugar to the sifted dry ingredients.
- 4
Whisk in the vegetable oil, heavy cream, eggs, egg yolk, vanilla, and milk until smooth.
- 5
Gradually pour the hot coffee into the batter while continuing to stir.
- 6
Pour the batter into the prepared pan or pans and bake for approximately 45 minutes. A toothpick inserted into the cake should not come out completely dry; a few small crumbs should remain on it.
- 7
Allow the cake to cool completely after baking.
- 8
For the frosting, beat the room-temperature butter with the powdered sugar and cocoa powder.
- 9
Add the vanilla and a pinch of salt, then mix.
- 10
In a small bowl, combine the warm milk and melted, slightly cooled dark chocolate until smooth.
- 11
Pour the milk and chocolate mixture into the butter mixture and mix to form the frosting.
- 12
Chill the frosting for a few minutes.
- 13
Assemble the cooled cake, generously spreading frosting over each layer.
Notes
The recipe does not specify the exact number of pans or how to divide the layers. The transcript confirms that the coffee-cocoa mixture enhances the chocolate flavor and that a toothpick should come out with a few crumbs rather than completely dry.
