Ingredients

  • 2 tbsp olive oil
  • 5 cloves garlic (Finely chopped)
  • 1 medium onion (Finely chopped)
  • 8 oz ground beef chuck
  • 10 oz frozen chopped spinach (Thawed and squeezed dry)
  • 8 large eggs (Lightly beaten)
  • kosher salt (To taste)
  • freshly ground black pepper (To taste)
  • 0.25 cup parmesan (Finely grated)
  • crusty bread (For serving)

Steps

  1. 1

Heat a large skillet over medium-high heat and add the olive oil. Cook until the oil is hot and shimmering.

  2. 2

Add the chopped garlic and onion. Cook, stirring occasionally, until softened, about 5 minutes.

  3. 3

Add the ground beef chuck. Cook, stirring occasionally and breaking the meat into pieces, until browned and the moisture has evaporated, about 10 minutes.

  4. 4

Stir in the thawed, squeezed-dry spinach. Cook until heated through, about 2 minutes.

  5. 5

Add the lightly beaten eggs. Cook, stirring occasionally, until the eggs are cooked and the mixture is slightly dry, about 4 minutes.

  6. 6

Season to taste with kosher salt and freshly ground black pepper.

  7. 7

Sprinkle the scramble with finely grated parmesan and serve with crusty bread.
