Ingredients
- 100 g Butter (Melt)
- 100 ml Milk (If needed, add a little more if the batter is too thick)
- 150 g Sugar for the batter
- 3 Eggs
- 200 g Wheat flour (Sift)
- Salt (A pinch)
- 2 Egg whites for the cream (Separate carefully from the yolks; no yolk should get into the whites)
- 120 g Sugar for the syrup (Divide in half)
- 50 ml Water
Steps
- 1
Prepare all the batter ingredients. Melt the butter and let it cool slightly.
- 2
Beat the eggs with the sugar and a pinch of salt until light and foamy.
- 3
Add the melted butter and milk, then beat the mixture again.
- 4
Add the sifted flour and mix well with a spatula. The batter should be thick.
- 5
Heat a frying pan. Place a small amount of batter in the pan and spread it as thinly as possible with a ladle. If the batter is too thick, add a little milk.
- 6
Fry the wafer on medium heat for approximately 3 minutes on each side, until golden brown.
- 7
Immediately after frying, while the wafer is hot and flexible, roll it into a tube. Let the tubes cool.
- 8
For the cream, prepare a clean, grease-free mixing bowl. Carefully separate the egg whites from the yolks so that no yolk gets into the whites.
- 9
Mix half of the sugar with the water and place over the heat. Heat until the sugar has completely dissolved. Do not stir: the syrup should boil actively and form bubbles.
- 10
While the syrup is cooking, beat the egg whites until stiff peaks form. Gradually add the remaining half of the sugar.
- 11
Pour the hot sugar syrup into the beaten egg whites in a thin stream while continuing to beat. Beat for several more minutes at maximum speed.
- 12
Fill the cooled wafer tubes with the protein cream and serve.
Notes
The protein cream can be replaced with dulce de leche. The source does not specify the exact number of finished tubes; the servings are approximately calculated for 8 pieces. The syrup temperature is not specified, so cook it until the sugar has completely dissolved and the syrup is actively boiling, as described in the source.
