Ingredients
- 3.5 lb beef chuck roast
- 1 onion (large, sliced)
- 9 garlic cloves (peeled)
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- salt (to taste)
- black pepper (to taste)
Steps
- 1
Season the beef chuck roast generously with Italian seasoning, salt, and black pepper on all sides.
- 2
In a large skillet, heat the olive oil over medium-high heat. Sear the beef roast on all sides until a golden-brown crust forms.
- 3
Place the sliced onion and peeled garlic cloves in the bottom of the slow cooker.
- 4
Place the seared beef roast on top of the onions and garlic.
- 5
In a small bowl or measuring cup, combine the beef broth and Worcestershire sauce. Pour the mixture into the slow cooker around the roast (not directly over the seasoning).
- 6
Place the butter on top of the roast.
- 7
Cover and cook on Low for 8–10 hours or on High for 5–6 hours, until the beef is fork-tender.
- 8
Remove the roast from the slow cooker and shred or slice. Serve with the juices and cooked onions/garlic from the pot.
Notes
For a thicker sauce, you can whisk a tablespoon of cornstarch with a little cold water and stir it into the slow cooker juices during the last 30 minutes of cooking.
