Ingredients

  • 1 lb ground beef
  • 3 potatoes (peeled and diced)
  • 1 onion (diced)
  • 2 clove garlic (minced)
  • 4 cup beef broth
  • 2 cup mixed vegetables (such as corn, peas, and carrots)
  • salt (to taste)
  • black pepper (to taste)

Steps

  1. 1

In a large pot or Dutch oven, brown the ground beef over medium-high heat until no longer pink. Drain any excess grease.

  2. 2

Add the diced onion and minced garlic to the pot with the beef. Sauté for 3-5 minutes until the onion is translucent and fragrant.

  3. 3

Stir in the diced potatoes and pour in the beef broth.

  4. 4

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, or until the potatoes are tender.

  5. 5

Add the mixed vegetables to the pot. Continue to simmer for another 5-10 minutes until the vegetables are heated through.

  6. 6

Season with salt and black pepper to taste before serving.
