Ingredients
- 333 g frozen potato minis (Woolworths brand recommended)
- 0.66 cup shredded mozzarella, cheddar & parmesan blend (Woolworths brand recommended)
- 2 tsp extra virgin olive oil
- 100 g shortcut bacon (finely chopped; Woolworths brand recommended)
- 1605 g potato & leek soup
- 500 g frozen baby peas (Woolworths brand recommended)
- 1 cup water
- 0.5 punnet rosemary (leaves removed from stems and chopped)
- freshly ground black pepper (to taste)

Air-fry the potato minis following the packet instructions until cooked through.

Sprinkle the cooked potatoes with the shredded mozzarella, cheddar, and parmesan blend, then air-fry for a further 2-3 minutes or until the cheese is melted and golden brown.

Meanwhile, heat the extra virgin olive oil in a large saucepan over medium-high heat.

Add the finely chopped shortcut bacon to the saucepan and cook, stirring, for 2-3 minutes or until crispy. Transfer the bacon to a plate and set aside.

Add the potato and leek soup to the same saucepan used for the bacon. Bring the soup to a boil, stirring occasionally.

Once boiling, reduce the heat to low. Add the frozen baby peas and 1 cup of water. Simmer for 2-3 minutes or until the peas are tender.

While the soup simmers, remove the rosemary sprigs from their stems and finely chop the leaves.

Ladle the soup into bowls. Top each serving with the cheesy air-fried potatoes and crispy bacon.

Serve immediately sprinkled with the chopped rosemary and freshly ground black pepper.
Notes
For a smoother consistency, you can blend the soup and peas together before adding the toppings, though the recipe as written provides a nice texture with whole peas.
