Ingredients
- 2 cup pitted cherries (For the syrup)
- 1 cup water (For the syrup)
- 1 cup sugar (For the syrup)
- 250 g mascarpone cheese (For the cream)
- 1 cup heavy whipping cream (For the cream)
- 0.5 cup powdered sugar (For the cream)
- 1 tsp vanilla (For the cream)
- 1 tbsp cornstarch (Dissolved in the water; added to the remaining syrup)
- 2 tbsp water (For dissolving the cornstarch)
- ladyfingers (As needed to form the layers)
- coffee (As needed to lightly soak the ladyfingers)
- fresh cherries (For decoration)
Steps
- 1
Place the pitted cherries, water, and sugar in a saucepan. Cook over medium heat until the cherries are soft and the liquid has reduced slightly.
- 2
Allow the cherry mixture to cool completely. Then blend it and pass it through a strainer to obtain the syrup.
- 3
Whip the heavy cream until it begins to thicken.
- 4
Add the powdered sugar, vanilla, and mascarpone cheese. Mix until smooth and fluffy.
- 5
Fold half of the cherry syrup into the mascarpone cream and mix until incorporated.
- 6
Dissolve the cornstarch in the 2 tablespoons of water. Add it to the remaining syrup and heat until thickened.
- 7
Allow the thickened syrup to cool before using it for assembly.
- 8
Lightly dip the ladyfingers in the coffee, without soaking them for too long so they retain their structure.
- 9
In a dish, create layers of dipped ladyfingers, mascarpone cream, and another layer of ladyfingers. Repeat the layers until the dish is full.
- 10
Finish with a generous layer of mascarpone cream. Pour the cooled, thickened syrup over the top and decorate with fresh cherries.
- 11
Refrigerate for a minimum of 2 hours. The dessert is even better when refrigerated overnight.
Notes
The recipe does not specify quantities for the ladyfingers, coffee, or fresh cherries; use as much as needed according to the size of the dish. Resting overnight improves the result.
