Ingredients

  • 150 g Soft butter
  • 175 g Sugar
  • 2 Eggs
  • 60 ml Fresh lemon juice
  • 0.5 c. à c. Lemon flavoring (Optional.)
  • 2 Lemon zest (Use the zest of 2 lemons, or 3 for an even more pronounced lemon flavor.)
  • 0.5 c. à c. Salt
  • 1 g Baking powder (Optional. Use only a small amount to preserve a dense texture; the recipe can also be made without baking powder.)
  • 155 g Flour
  • 120 g Powdered sugar (For the glaze.)
  • 50 ml Lemon juice (For the glaze.)
  • 1 Lemon zest (For the glaze.)

Steps

  1. 1

Preheat the oven to 180 °C. Line a square pan with parchment paper.

  2. 2

Mix the softened butter with the sugar until smooth and homogeneous.

  3. 3

Add the eggs one at a time, mixing without overworking the batter.

  4. 4

Add the fresh lemon juice, lemon zest and salt.

  5. 5

Add the flour and baking powder, along with the lemon flavoring if using. Mix just until the batter is smooth.

  6. 6

Pour the batter into the prepared pan and bake for 22 to 25 minutes. The top should be set while the center remains very moist.

  7. 7

Let the brownie cool completely before glazing it.

  8. 8

Prepare the glaze by mixing the powdered sugar with the lemon juice until smooth.

  9. 9

Spread the glaze over the completely cooled brownie, then add the lemon zest.

  10. 10

Let the glaze set for 20 to 30 minutes before cutting the brownie.

Notes

The recipe indicates that the baking powder is optional: using a small amount keeps the brownie dense; it can also be prepared without baking powder. The total time includes complete cooling and the 20 to 30 minutes needed for the glaze to set.
