  • 4 ciabatta rolls
  • 1 tbsp garlic powder
  • 1 cup tomato sauce
  • 0.5 cup unsweetened heavy whipping cream
  • 1 tbsp red chili flakes
  • 2 tbsp fresh garlic (Minced)
  • 1 white onion (Chopped)
  • 0.5 cup basil leaves (Plus additional leaves for serving if desired)
  • salt (To taste)
  • black pepper (To taste)
  • 0.5 cup bread crumbs
  • 0.5 cup all-purpose flour
  • 1 tbsp Italian seasoning
  • 1 cup fresh mozzarella cheese (Cut or portion into slices)
  • 0.5 cup grated Parmesan cheese (Mixed into the breadcrumbs and used additionally for serving)
  • 3 tbsp oil (For cooking the chicken)
  • 2 eggs
  • 2 tbsp butter (For the marinara sauce)

Steps

  1. 1

Preheat the oven to 400°F (205°C).

  2. 2

Cut the butterflied chicken breasts in half horizontally to create thin cutlets.

  3. 3

In a shallow dish, combine the all-purpose flour, garlic powder, Italian seasoning, salt, and black pepper.

  4. 4

In a second shallow dish, whisk the eggs.

  5. 5

In a third shallow dish, combine the bread crumbs and grated Parmesan cheese.

  6. 6

Coat each chicken cutlet in the flour mixture, shaking off any excess.

  7. 7

Dip each floured cutlet into the whisked eggs.

  8. 8

Transfer the egg-coated chicken to the breadcrumb mixture and coat it thoroughly.

  9. 9

Heat the oil in a large skillet over medium-high heat.

  10. 10

Add the breaded chicken to the skillet and cook until golden brown and cooked through, about 3–4 minutes per side.

  11. 11

To make the marinara sauce, melt the butter in a pan over medium heat.

  12. 12

Add the chopped onion and minced garlic to the butter and cook them in the pan.

  13. 13

Add the tomato sauce, salt, black pepper, and red chili flakes to the pan.

  14. 14

Add the heavy whipping cream and let the sauce simmer for 2 minutes.

  15. 15

Stir in the fresh basil leaves.

  16. 16

Transfer the cooked chicken to a baking sheet.

  17. 17

Top each chicken piece with marinara sauce and a slice or portion of fresh mozzarella cheese.

  18. 18

Bake until the cheese is melted and bubbly, about 15–20 minutes.

  19. 19

    Toast the ciabatta sandwich rolls.

  20. 20

Assemble each sandwich by placing a chicken cutlet on the bottom half of a toasted roll.

  21. 21

Top the chicken with additional marinara sauce, grated Parmesan cheese, and basil leaves if desired. Serve hot.

Notes

The source does not specify how long or at what temperature to toast the ciabatta rolls. It also does not give a separate quantity for the additional marinara, Parmesan, or basil used at assembly; reserve some of each for serving.
