- 1 tsp baking powder
- 0.5 tsp salt
- 1 tbsp sugar (For the dough)
- 1 tsp cinnamon (For the dough)
- 80 ml whole milk (For the dough)
- 2 tbsp butter (Melted; for the dough)
- 1 tsp vanilla extract (For the dough)
- 2 tbsp butter (Melted; for coating the dough balls)
- 2 tbsp white sugar (For the cinnamon sugar coating)
- 2 tsp cinnamon (For the cinnamon sugar coating)
- salt (A pinch; for the cinnamon sugar coating)
- 3 tbsp butter (Optional cinnamon butter; microwave until melted)
- 3 tbsp brown sugar (Optional cinnamon butter)
- 1 tsp cinnamon (Optional cinnamon butter)
- 3 tbsp heavy cream (Optional; drizzle over the dough balls)
- 2 oz cream cheese (Room temperature; for the glaze)
- 2 tbsp butter (Room temperature; for the glaze)
- 0.667 cup powdered sugar (For the glaze)
- 0.5 tsp vanilla extract (For the glaze)
- milk (A splash, as needed, for the glaze)
Steps
- 1
Preheat the oven to 375°F (190°C). Prepare a greased oven-safe skillet or baking dish.
- 2
In a bowl, whisk together the flour, cornstarch, baking powder, salt, sugar, and cinnamon for the dough.
- 3
In a separate bowl, whisk together the whole milk, melted butter, and vanilla. Pour the wet mixture into the dry ingredients and mix until a shaggy dough forms.
- 4
Transfer the dough to a lightly floured surface and knead for 1–2 minutes, until smooth.
- 5
Roll the dough into a log approximately 12 inches (30 cm) long and 3 inches (8 cm) wide. Slice the log in half lengthwise, then cut across it 5–6 times to make bite-sized pieces. Roll each piece into a ball.
- 6
Place the dough balls in a bowl. Add the melted butter, white sugar, cinnamon, and pinch of salt for the coating, then toss until the balls are evenly covered.
- 7
Arrange the coated dough balls in the greased oven-safe skillet or baking dish.
- 8
If using the optional cinnamon butter, microwave the butter, brown sugar, and cinnamon until melted, then stir them together. Pour the mixture over the dough balls.
- 9
If using, drizzle the heavy cream over the top of the dough balls.
- 10
Bake for 10–12 minutes, or until the bites are puffed and lightly golden.
- 11
While the bites bake, beat together the room-temperature cream cheese, room-temperature butter, powdered sugar, vanilla, and a splash of milk as needed until the glaze is smooth.
- 12
Let the cinnamon roll bites cool for a few minutes, then serve with the vanilla cream cheese glaze.
Notes
The cinnamon butter and heavy cream are optional. The source describes the recipe as taking under 20 minutes. The amount of milk for the glaze is not specified; add only enough to reach a smooth consistency.
