Ingredients

  • Napa cabbage leaves (Enough to wrap the filling; round cabbage can be used instead.)
  • 250 g Ground chicken
  • 1 tbsp Ginger (Very finely chopped.)
  • 1 tbsp Garlic (Very finely chopped.)
  • 0.5 cup Scallion (Very finely chopped.)
  • 0.5 cup Carrot (Very finely chopped.)
  • 2.5 tbsp Light soy sauce (1½ tbsp for the filling and 1 tbsp for the sauce.)
  • 1 tbsp Oyster sauce
  • 1.5 tsp Sesame oil (1 tsp for the filling and ½ tsp for the sauce.)
  • 0.25 tsp White pepper
  • 1 tbsp Cornstarch (To bind the filling.)
  • Salt (Adjust carefully according to how salty the soy sauce is.)
  • 1.5 tsp Oil (For browning the rolls; the recipe specifies 1–2 tsp.)
  • 0.5 cup Hot water (For steaming.)
  • 1 tbsp Vinegar (For the sauce.)
  • 2 tbsp Water (For the sauce.)
  • 0.5 tsp Sugar (For the sauce.)
  • Chili oil (For finishing, to taste.)
  • Sesame seeds (For finishing, to taste.)

Steps

  1. 1

Blanch the Napa cabbage leaves in hot water just until softened. Remove them, carefully pat them completely dry, and set aside.

  2. 2

Place the ground chicken, ginger, garlic, scallion, carrot, 1½ tbsp light soy sauce, oyster sauce, 1 tsp sesame oil, white pepper, and cornstarch in a bowl. Mix well.

  3. 3

Adjust the salt carefully, taking into account how salty the soy sauce is.

  4. 4

Place 2–3 tbsp of filling on each leaf. Roll gently and place each roll seam-side down.

  5. 5

Heat a skillet with 1–2 tsp of oil. Lightly brown the rolls until golden.

  6. 6

Add ½ cup of hot water to the skillet and cover it. Steam for 4–5 minutes, until the chicken is cooked through.

  7. 7

For the sauce, mix 1 tbsp light soy sauce, 1 tbsp vinegar, 2 tbsp water, ½ tsp sesame oil, and ½ tsp sugar.

  8. 8

Pour the sauce over the rolls and finish with chili oil and sesame seeds.

Notes

The source does not specify how many cabbage leaves are needed or the quantities of chili oil and sesame seeds for finishing. If you cannot find Napa cabbage, you can use round cabbage.
