Ingredients
- 2 tbsp soy sauce
- 2 tbsp creamy natural peanut butter (Omit for a nut-free marinade; almond butter is also suggested as a substitution.)
- 1 tbsp maple syrup (Agave nectar may be substituted.)
- 1 tsp fresh garlic (Finely chopped; jarred garlic or 1/2 teaspoon garlic powder may be substituted.)
- 1 tsp fresh ginger (Finely chopped; jarred ginger or 1/2 teaspoon ground ginger may be substituted.)
- dried chili flakes (A pinch; optional. May be omitted, replaced with finely chopped fresh chili pepper, or replaced with 1 teaspoon sriracha.)
Steps
- 1
Add the soy sauce, creamy natural peanut butter, maple syrup, finely chopped garlic, finely chopped ginger, and optional dried chili flakes to a mixing bowl.
- 2
Whisk until the ingredients are thoroughly combined and the marinade is smooth.
- 3
Use immediately to marinate tofu, or transfer the marinade to an airtight container and refrigerate for up to five days. The recipe makes enough for one block of tofu; the tofu can be marinated for 30 minutes to 24 hours, with 1–2 hours suggested as ideal.
Notes
The source also suggests 1 teaspoon curry powder as an optional addition. For cooking marinated tofu, the author recommends baking on parchment at 350°F (about 177°C) for 20 minutes, grilling, or cooking in a little coconut oil on the stovetop.
