Ingredients
- 2 carrots (large, diced)
- 2 celery stalks (diced)
- 0.5 yellow onion (large, diced)
- 2 chicken breasts (diced)
- 1.5 tsp garlic powder
- 1.5 tsp dried thyme
- 1.5 tsp dried parsley
- 1.5 tsp dried oregano
- 1.5 tsp buttery garlic & herb seasoning
- 1.5 tsp salt (Adjust to taste)
- 0.5 tsp black pepper
- 8 cup water (Add more water if you prefer a brothier soup)
- 2 tbsp chicken base or seasoning (The author uses Better Than Bouillon)
- 4 tbsp butter
- 4.5 tbsp all-purpose flour
- 8 oz spaghetti noodles (Break in half before adding)
- 0.5 cup heavy cream
- additional water or chicken broth (Add as needed to reach the desired consistency or when reheating)
Steps
- 1
Melt the butter in a large pot over medium heat.
- 2
Add the diced carrots, celery, and yellow onion. Cook for 5–7 minutes, or until the vegetables begin to soften.
- 3
Sprinkle in the all-purpose flour and stir until the vegetables are evenly coated. Cook for 1–2 minutes.
- 4
Slowly pour in the water while stirring continuously.
- 5
Add the chicken base or seasoning, garlic powder, thyme, parsley, oregano, buttery garlic and herb seasoning, salt, and black pepper. Stir well to combine.
- 6
Add the diced chicken breasts. Bring the soup to a gentle boil, then reduce the heat and simmer for 10–15 minutes, or until the chicken is cooked through and the vegetables are tender.
- 7
Break the spaghetti noodles in half and add them to the soup. Cook according to the package directions, stirring occasionally, until the noodles are tender.
- 8
Reduce the heat to low and stir in the heavy cream. Cook for another 2–3 minutes, just until the cream is warmed through.
- 9
Taste and adjust the seasonings as needed.
- 10
If you prefer more broth, add additional water or chicken broth until the soup reaches the desired consistency.
- 11
When reheating leftovers, add additional water or broth as needed because the noodles continue to absorb the broth as the soup sits.
Notes
The noodles continue to absorb broth as the soup sits, so add additional water or chicken broth when reheating. The source does not specify an internal temperature for the chicken; cook until it is cooked through.
