Ingredients
- 1.5 cup tahini (can also use sunflower seed butter)
- 1 cup honey (range of 0.75 to 1 cup; 1 cup is recommended for better texture and sweetness)
- 1.5 tsp vanilla extract
- salt (a pinch)
- 3.75 cup plain rolled oats
- 0.25 cup pepitas (pumpkin seeds)
- 0.5 cup chocolate chips

In a large mixing bowl, combine the tahini (or sunflower seed butter), honey, and vanilla extract. Mix well until the ingredients are thoroughly incorporated.

Add the rolled oats, pepitas, chocolate chips, and a pinch of salt to the bowl.

Mix the ingredients together until the mixture is uniform and everything comes together into a thick, sticky dough.

Line a medium-sized baking tray with parchment paper.

Transfer the mixture into the lined tray and press down very firmly with your hands or the back of a spoon to flatten it into an even layer.

Place the tray in the refrigerator and chill for at least 2 hours to allow the bites to set.

Once set, remove from the tray and slice into 35 small squares.
Notes
Storage: Store in an airtight container in the fridge for up to 1 week or in the freezer for up to 2 months. If freezing, place baking paper between layers to prevent sticking. For lunchboxes, transfer from the freezer to the fridge the night before to defrost, then pack chilled into an insulated lunchbox.
