Ingredients

  • 2 chicken breasts (Large; filleted lengthwise into 4 thin cutlets, or use 3–4 small chicken breasts)
  • salt and black pepper (To taste)
  • olive oil (A drizzle, for cooking)
  • 2 ripe peaches (Sliced)
  • 1 jalapeños (Sliced; use 1–2 jalapeños)
  • 3 cloves garlic (Minced)
  • 2 tbsp honey
  • 2 tbsp soy sauce (Plus more to taste)
  • 1 tbsp Dijon mustard (Heaping tablespoon)
  • 0.5 cup chicken broth
  • 2 tbsp water
  • 1 tsp cornstarch (Heaping teaspoon)
  • cooked rice (For serving)
  • fresh cilantro (For serving)
  • lime wedges (For serving)

Steps

  1. 1

Fillet the chicken breasts lengthwise into 4 thin cutlets, unless using small chicken breasts. Season the chicken on both sides with salt and black pepper.

  2. 2

Heat a drizzle of olive oil in a skillet over medium-high heat.

  3. 3

Add the seasoned chicken to the skillet and cook for about 3 minutes per side, until golden. Transfer the chicken to a plate.

  4. 4

Add the sliced peaches, sliced jalapeños, and minced garlic to the same skillet. Cook for about 3–5 minutes, until the peaches soften.

  5. 5

Stir the honey, soy sauce, Dijon mustard, and chicken broth into the skillet with the softened peaches and jalapeños.

  6. 6

In a small bowl, whisk together the water and cornstarch until smooth.

  7. 7

Pour the cornstarch mixture into the skillet and stir until the sauce thickens.

  8. 8

Taste the sauce and add a little more soy sauce if needed.

  9. 9

Return the chicken to the skillet and spoon the sauce over the top.

  10. 10

Simmer the chicken in the sauce for another 2–3 minutes, until fully cooked.

  11. 11

Serve the glazed chicken over cooked rice and finish with fresh cilantro and lime wedges.
