Ingredients

  • 1 cup quinoa (Rinse thoroughly before cooking if not pre-rinsed.)
  • 2 cups water (The transcript also refers to vegetable stock; vegetable stock may be used instead of water for more flavor.)
  • salt (Season the cooking liquid to taste; the transcript says to season the vegetable stock.)

Steps

  1. 1

Rinse the quinoa under cool running water in a fine-mesh sieve, rubbing the grains gently with your fingers. Drain well; rinsing helps remove any bitter coating.

  2. 2

Place the rinsed quinoa and 2 cups of water in a saucepan. If using vegetable stock instead of water, add the stock and season it with salt to taste.

  3. 3

Bring the liquid to a boil over medium-high heat with the saucepan uncovered.

  4. 4

Once boiling, cover the saucepan with a lid and reduce the heat to low. Simmer for 15 minutes, keeping the lid on, until the liquid is absorbed and the quinoa is tender.

  5. 5

Remove the saucepan from the heat completely and leave it covered for 10 minutes. This resting period allows the quinoa to finish steaming and become fluffy.

  6. 6

Remove the lid and fluff the quinoa gently with a fork. Serve warm or use it as the base for a quinoa salad, such as a pomegranate quinoa salad.

Notes

The creator emphasizes a 1:2 ratio of quinoa to liquid, a 15-minute covered simmer, and a crucial 10-minute covered rest off the heat. Do not lift the lid during simmering or resting.
