Two golden, crispy sourdough sandwiches filled with creamy, spicy tuna, pickled jalapeños, fresh herbs, and melted cheddar or mozzarella. A pan-toasted finish gives the bread a browned crust while the covered pan helps melt the cheese.

Ingredients

  • 2 cans canned tuna, drained (114 g per can)
  • 0.25 cup Kewpie or regular mayonnaise
  • 3 tbsp plain yogurt
  • salt (to taste)
  • 1 tsp red chili flakes
  • 1.5 tsp dried parsley
  • 2 tbsp fresh cilantro or parsley (finely chopped)
  • 0.25 cup hot sauce
  • 2 tbsp sriracha (or to taste)
  • 0.5 onion (finely chopped)
  • garlic (3–4 cloves, finely chopped)
  • 0.25 cup pickled jalapeños (chopped)
  • 1.5 tsp smoked paprika
  • sourdough bread (enough for 4 slices, or 2 sandwiches)
  • cheddar or mozzarella cheese (as much as desired)
  • butter (a little, for toasting)

Steps

  1. 1

Add the drained tuna, mayonnaise, salt, red chili flakes, dried parsley, fresh chopped herbs, hot sauce, sriracha, yogurt, chopped onion, chopped garlic, chopped pickled jalapeños, and smoked paprika to a bowl. Mix until everything is well combined.

  2. 2

Spread half of the tuna mixture onto one slice of sourdough bread. Top with as much cheddar or mozzarella as desired, then close the sandwich with another slice of bread. Repeat with the remaining tuna mixture to make the second sandwich.

  3. 3

Heat a pan over medium heat and add a little butter. Place the sandwiches in the pan and toast until golden brown on both sides, about 4 minutes total. If available, place a weight on top so the sandwiches brown evenly.

  4. 4

Halfway through toasting, cover the pan for 2–3 minutes to help the cheese melt completely.

  5. 5

    Slice the sandwiches and enjoy.

Notes

The source does not specify the amount of bread, cheese, or butter; use enough bread for two sandwiches, cheese to taste, and a small amount of butter for pan-toasting. The source does not specify the exact cheese quantity or pan equipment beyond using a pan and an optional weight.
