Ingredients

  • 8 potatoes (Medium, peeled)
  • 1 tsp salt (Plus extra for the boiling water)
  • 2 tsp chicken bouillon powder
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp smoked paprika (For the potato mixture)
  • 2 eggs (For the potato mixture)
  • 1 cup shredded mozzarella
  • 0.75 cup grated Parmesan
  • 1 cup mozzarella (Cut into small cubes for the filling)
  • 1 cup plain flour (For coating)
  • 2 eggs (Beaten, for coating)
  • 2 cups crushed cornflakes (Or breadcrumbs; for coating)
  • oil (For deep-frying)
  • 0.5 cup mayonnaise (For the spicy mayo)
  • 1 tbsp sriracha (For the spicy mayo)
  • 0.5 tsp smoked paprika (For the spicy mayo)
  • 0.5 tsp garlic powder (For the spicy mayo)
  • 0.5 tsp onion powder (For the spicy mayo)
  • 0.5 tsp dried parsley (For the spicy mayo)

Steps

  1. 1

Bring a large pot of generously salted water to a boil. Add the peeled potatoes and boil until fork-tender.

  2. 2

Drain the potatoes well, then mash them until completely smooth.

  3. 3

Add the measured salt, chicken bouillon powder, onion powder, garlic powder, and smoked paprika to the mashed potatoes. Add the two eggs, shredded mozzarella, and grated Parmesan, then mix until fully combined.

  4. 4

Refrigerate the potato mixture for 30 minutes so it firms up and becomes easier to shape.

  5. 5

Scoop out portions of the chilled potato mixture and flatten each portion slightly in your hand.

  6. 6

Place a cube of mozzarella in the center of each flattened portion. Seal the potato mixture around the cheese and roll it into a smooth ball.

  7. 7

Freeze the shaped potato balls for 1 hour, or until firm.

  8. 8

Set up the coating ingredients. Coat each potato ball first in the plain flour.

  9. 9

Dip the floured potato ball into the beaten eggs.

  10. 10

Coat the egg-dipped ball thoroughly in the crushed cornflakes or breadcrumbs.

  11. 11

    Heat the deep-frying oil to 180°C (350°F).

  12. 12

Deep-fry the coated potato balls for 3–4 minutes, or until golden brown and crispy and the cheese inside is melted.

  13. 13

Meanwhile, whisk the mayonnaise, sriracha, smoked paprika, garlic powder, onion powder, and dried parsley together until the spicy mayo is smooth.

  14. 14

Serve the potato balls immediately while hot with the spicy mayo for the best cheese pull.

Notes

The source gives no exact amount of oil for deep-frying. Use enough oil to deep-fry the balls safely while maintaining 180°C (350°F). The source allows either crushed cornflakes or breadcrumbs for the coating.
