Ingredients
- 1 cup all-purpose plain flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 0.5 tsp salt
- 0.75 cup milk (Add 1–2 extra tablespoons if needed to slightly thin the batter; do not make it runny.)
- 2 tbsp butter (Melted and slightly cooled; additional butter or cooking oil may be used to grease the pan.)
- 1 tsp pure vanilla extract
- 1 large egg
- butter or cooking oil (For lightly greasing the pan between batches.)
- maple syrup (Optional, for serving.)
- honey (Optional, for serving.)
- fruit (Optional, for serving.)
- ice cream (Optional, for serving.)
- frozen yogurt (Optional, for serving.)
Steps
- 1
Combine the flour, sugar, baking powder, and salt in a bowl. Mix the dry ingredients together.
- 2
Add the milk, slightly cooled melted butter, vanilla extract, and egg to the dry ingredients.
- 3
Mix until the batter is smooth and lump-free. If needed, add 1–2 extra tablespoons of milk to slightly thin the batter, taking care not to make it runny.
- 4
Leave the batter to rest for about 5 minutes while heating a nonstick pan over medium-high heat.
- 5
Lightly grease the hot pan with a little butter or cooking oil.
- 6
Pour the batter into a squeezable condiment or sauce bottle. Alternatively, place it in a ziplock bag, cut a tiny hole at an angle in one bottom corner, and use the bag to pipe the batter.
- 7
Squeeze small dots of batter onto the hot, greased pan.
- 8
Cook until the tops form bubbles and look set and dry.
- 9
Flip the mini pancakes with a spatula and cook until the undersides are golden, about 1–2 minutes longer.
- 10
Repeat with the remaining batter, lightly greasing the pan between each batch.
- 11
Serve with maple syrup, honey, fruit, ice cream, or frozen yogurt, or enjoy the mini pancakes plain.
