Ingredients
- 400 g Boneless chicken thighs (Chicken breast can be used for a lighter version.)
- 1 tsp Curry powder
- 1 tsp Paprika
- 0.5 tsp Garlic powder
- 0.25 tsp Turmeric
- Salt (Adjust to taste.)
- Pepper (Adjust to taste.)
- 100 g Onion (Diced.)
- 10 g Soy sauce
- 200 ml Light coconut milk
- 2 Golden Curry cubes (Approximately 36โ40 g total.)
- Water (A little, only if needed to loosen the sauce.)
- 50 g White cabbage (Finely shredded.)
- 50 g Carrot (Cut into fine julienne strips.)
- 15 g Extra-light mayonnaise
- 3 g Sesame oil
- 8 g Rice vinegar
- 4 g Agave syrup
- Salt (For the coleslaw, to taste.)
- White pepper (For the coleslaw, to taste.)
Steps
- 1
Season the boneless chicken thighs with the curry powder, paprika, garlic powder, turmeric, salt, and pepper.
- 2
Place the chicken skin-side down in a cold pan without adding oil. Heat gradually to render the chicken fat and achieve crisp, well-browned skin.
- 3
Turn the chicken over and finish cooking it, then set it aside.
- 4
In the same pan, sautรฉ the diced onion in the drippings left by the chicken.
- 5
Add the soy sauce and stir to combine it with the onions and cooking juices.
- 6
Add the light coconut milk and the two Golden Curry cubes.
- 7
Let the cubes melt and the sauce thicken gently. Add a little water only if necessary, until the sauce is creamy and thick enough to coat the back of a spoon.
- 8
If desired, strain the sauce to remove the onion pieces. Otherwise, set the onions aside to use as a topping at the end.
- 9
For the coleslaw, combine the white cabbage, carrot, extra-light mayonnaise, sesame oil, rice vinegar, and agave syrup. Season with salt and white pepper.
- 10
Let the coleslaw rest for 10 to 15 minutes.
- 11
Cut the chicken into strips, divide it among the plates, and generously pour over the sauce. Optionally, add the reserved onions as a topping and serve with the Japanese coleslaw.
