Ingredients
- 4 Boneless chicken thighs
- Cornstarch (For lightly coating the chicken)
- Salt (To taste)
- Oil (A little, for cooking the chicken)
- 30 g Butter
- 4 gousses Chopped garlic (Coarsely chopped)
- 2 c. à s. Soy sauce
- 1 c. à s. Mirin
- 1 c. à s. Honey
- 1 Lime (Juice and zest)
- 0.5 c. à c. Paprika, chili flakes and black pepper (Quantity indicated for all the spices combined)
- Sesame seeds (For serving)
- Chives (For serving)
- Hot rice (For serving)
Steps
- 1
Season the chicken thighs with salt and pepper. Lightly coat them with cornstarch, then tap off the excess.
- 2
Heat a skillet with a little oil. Cook the chicken for about 7 minutes on each side, until well browned and crispy. Remove it from the skillet and set aside.
- 3
Meanwhile, coarsely chop the garlic and mix together the soy sauce, mirin, honey, paprika, chili flakes and black pepper.
- 4
Melt the butter in the skillet, then sauté the garlic for 1 minute.
- 5
Add the sauce mixture, then pour in the lime juice and add the lime zest. Reduce until the sauce is thick enough to coat the back of a spoon.
- 6
Return the chicken to the skillet and coat it with the sauce for 1 minute.
- 7
Serve the chicken over hot rice with the remaining sauce, sesame seeds and chives.
Notes
The quantities of cornstarch, oil, salt, rice, sesame seeds and chives are not specified in the source. The transcript indicates that the sauce should be prepared by mixing its ingredients together first before adding it to the skillet.
