Ingredients
- 0.25 tbsp butter (For buttering the gratin dish)
- 2 ears sweet corn kernels (Sliced off the ears)
- 2 spring onions (Finely sliced)
- 2 sprigs tarragon leaves (Leaves stripped from the sprigs)
- 0.75 lb whole raw shrimp (Source specifies 3/4 to 1 lb; shell, devein, wash, pat dry, and cut into 1/2-inch pieces)
- 1 cup sourdough bread (Better if slightly stale; cut into small 1/2- to 1-inch chunks)
- 1 tsp Maldon salt
- 0.125 tsp black pepper
- 0.125 tsp cayenne pepper (Or use the smallest pinch)
- 0.333 cup heavy whipping cream
- 1 tbsp butter (Cut into pats and scattered over the surface)
- 2 tbsp Parmigiano Reggiano (Microplane-grated, for dusting the top)
- 1 tsp chives (Finely chopped, to finish)
- fresh lemon juice (To finish, for brightness)
Steps
- 1
Preheat the oven to 450°F convection.
- 2
Butter an ovenproof gratin dish with the 1/4 tablespoon butter and set the dish aside.
- 3
In a mixing bowl, begin layering the ingredients by adding the corn kernels, finely sliced spring onions, and tarragon leaves.
- 4
Add the prepared shrimp, sourdough bread chunks, Maldon salt, black pepper, and cayenne pepper to the bowl.
- 5
Pour the heavy whipping cream over the ingredients and stir gently to combine everything.
- 6
Spoon the mixture gently into the prepared gratin dish.
- 7
Give the surface a generous dusting of grated Parmigiano Reggiano and scatter the pats of butter over the shrimp and corn.
- 8
Place the gratin in the preheated oven and cook for about 10 minutes, until the top is golden and bubbling and the shrimp are just perfectly cooked, not overcooked.
- 9
Finish with the finely chopped chives and a squeeze of fresh lemon juice. Serve immediately.
Notes
The gratin can be prepared ahead and stored in the refrigerator. When ready to serve, place it in the oven; the source states it will be ready about 10 minutes later. The source does not specify a refrigerator-to-oven temperature adjustment or a storage duration.
