Ingredients
- 300 ml kefir (warm until lukewarm, but not hot)
- 1 egg
- 2 tbsp sugar
- 0.5 tsp salt
- 250 g all-purpose flour
- 1 tsp baking soda (level; no need to neutralize)
- vegetable oil (for frying; pour in a layer approximately 4–5 mm deep)
- topping of your choice (for serving)
Steps
- 1
Warm the kefir in the microwave until lukewarm, but not hot. Warm kefir is one of the main conditions for successful pancakes.
- 2
In a bowl, whisk the egg with the sugar and salt for approximately 1 minute, until the mixture is smooth and lightly foamy.
- 3
Pour the warm kefir into the egg mixture and whisk until smooth.
- 4
Add the flour and baking soda. Do not neutralize the baking soda. Mix into a smooth, thick batter without lumps.
- 5
Cover the bowl with a towel and let the batter rest for approximately 30 minutes.
- 6
Do not stir the batter after resting. Gently scoop it with a spoon, starting from the edges of the bowl, to preserve the air bubbles that have formed.
- 7
Heat a frying pan with the vegetable oil over high heat. Use slightly more oil than usual, in a layer approximately 4–5 mm deep, so the pancakes turn out more like doughnuts.
- 8
Reduce the heat to medium. Spoon the batter into the pan, forming pancakes.
- 9
When the first bubbles appear on the surface of the pancakes, flip them.
- 10
Cover the pan with a lid and fry the pancakes until done.
- 11
Transfer the finished pancakes to a paper towel to absorb excess oil.
- 12
Serve hot with your favorite topping.
Notes
The key conditions for this recipe are warm, but not hot, kefir and resting the batter for approximately 30 minutes. Do not stir the batter after resting, otherwise you may lose the air bubbles. The exact frying time is not specified in the source: fry until done.
