Ingredients
- 1 kg Small waxy potatoes
- 3 EL Sea salt (For cooking the potatoes; the transcript mentions 3–4 tbsp per kg, while the ingredient list specifies 3 tbsp.)
- 2 Red bell peppers, roasted and peeled (Can be roasted at home or purchased ready-roasted.)
- 2 Garlic cloves
- 1 TL Smoked paprika
- 1 TL Sweet paprika
- 1 Red chili (Small; adjust the heat to taste.)
- 1 TL Ground cumin
- 2 EL White wine vinegar (Alternatively, use sherry vinegar; red wine vinegar is also mentioned as an alternative in the transcript.)
- 90 ml Olive oil (Source: 80–100 ml.)
- 1 Stale bread (Small slice, finely grated; alternatively, use 2 tbsp breadcrumbs.)
- Salt (For the Mojo Rojo, to taste.)
- Black pepper (For the Mojo Rojo; a generous amount or to taste.)
Steps
- 1
Wash the small potatoes thoroughly and place them in a pot. Add enough water to just cover the potatoes.
- 2
Add the sea salt to the water and boil the potatoes uncovered over very high heat.
- 3
While the potatoes are cooking, prepare a tall container for the Mojo Rojo. If necessary, cut the roasted, peeled peppers into smaller pieces and place them in the container.
- 4
Add the garlic cloves, chili, smoked paprika, sweet paprika, and cumin to the peppers.
- 5
Add the white wine vinegar. Alternatively, use sherry vinegar or, as mentioned in the spoken recipe, red wine vinegar.
- 6
Finely grate the stale bread and add it to the container along with the salt and a generous amount of pepper. Alternatively, use 2 tbsp breadcrumbs.
- 7
Add the olive oil and blend everything thoroughly with an immersion blender until a cohesive Mojo Rojo forms.
- 8
Continue cooking the potatoes uncovered while the water slowly evaporates. The more the water reduces, the wrinklier the potatoes will become.
- 9
The potatoes are ready when most of the water has evaporated and a salty crust has formed on them.
- 10
Serve the Papas Arrugadas with the Mojo Rojo.
Notes
The source does not specify an exact cooking time or amount of water beyond “just covered.” Therefore, cook the potatoes according to their appearance and condition rather than for a fixed time. The peppers can be roasted in the oven until the skin is blackened; then peel off the skin, or use ready-roasted peppers.
