Ingredients

  • 1 lb pasta (Penne, rotini, or bow tie)
  • 1 McCormick Fajita Seasoning Mix (Divided)
  • 1 lb skinless boneless chicken breast (Cut into bite-size pieces)
  • 2 tbsp olive oil (Divided)
  • 1 cup bell pepper (Sliced)
  • 1 small onion (Sliced)
  • 2 tbsp butter
  • 3 cloves garlic (Minced)
  • 2 tbsp tomato paste
  • 1 cup heavy cream
  • 5.5 cup chicken broth
  • 1 cup Monterey Jack cheese (Freshly shredded)
  • 1 cup Cheddar cheese (Freshly shredded)
  • Parmesan cheese (Freshly grated, for topping)
  • fresh parsley (Freshly chopped, for topping)
  • McCormick Crushed Red Pepper (For topping, if desired)

Steps

  1. 1

Cook the pasta according to the package directions until al dente. Drain and set aside.

  2. 2

Season the bite-size chicken pieces with half of the fajita seasoning mix.

  3. 3

Heat 1 tablespoon of the olive oil in a large skillet. Add the seasoned chicken and cook until golden and cooked through. Remove the chicken from the skillet and set it aside.

  4. 4

Add the remaining 1 tablespoon olive oil to the same skillet, followed by the sliced bell pepper and onion. Sauté until the vegetables are tender, then remove them from the skillet and set aside.

  5. 5

Melt the butter in the same skillet. Add the minced garlic and tomato paste, and cook for about 1 minute.

  6. 6

Stir in the heavy cream, chicken broth, and remaining fajita seasoning mix.

  7. 7

Reduce the heat. Stir in the Monterey Jack and Cheddar cheeses until they are melted and the sauce is creamy.

  8. 8

Add the cooked pasta, chicken, bell pepper, and onion back to the skillet. Stir until everything is combined and coated in the sauce.

  9. 9

Top with freshly grated Parmesan, chopped parsley, and crushed red pepper, if desired. Serve while hot.

Notes

Keep the sauce a little extra creamy because the pasta will soak it up as it sits. A Mexican blend cheese can be substituted for the Monterey Jack and Cheddar. The source states approximately 10 minutes prep time and 20 minutes cook time.
