Ingredients

  • 1 tbsp medium sweet potatoes (Washed; peel if preferred and cut into 2.5 cm (1-inch) cubes.)
  • 2 tbsp olive oil (Divided; avocado oil may be used instead.)
  • 30 g homemade taco seasoning (Or 1 store-bought packet. Use 1 teaspoon with the sweet potatoes and the remainder with the beef.)
  • 500 g lean beef mince (Also called lean ground beef.)
  • 2 cups dairy-free cottage cheese (Use homemade dairy-free cottage cheese, regular cottage cheese, or lactose-free cottage cheese if preferred.)
  • 1 avocado (Peeled and diced.)
  • 1.5 tbsp hot honey (Source specifies 1–2 tablespoons; drizzle to taste.)

Steps

  1. 1

Wash the sweet potatoes. Peel them if preferred, then cut them into 2.5 cm (1-inch) cubes.

  2. 2

Place the sweet potato cubes in a bowl. Add 1 tablespoon of the oil and 1 teaspoon of the taco seasoning, then toss until the cubes are evenly coated.

  3. 3

Arrange the sweet potatoes in a single layer in the air-fryer basket. Cook at 200°C (400°F) for 20 minutes, shaking the basket occasionally so they cook evenly.

  4. 4

While the sweet potatoes cook, heat the remaining 1 tablespoon of oil in a large frying pan over medium heat.

  5. 5

Add the beef mince to the hot pan. Cook while breaking it apart with a wooden spoon until browned.

  6. 6

Stir the remaining taco seasoning into the beef along with a splash of water. Continue cooking until the mince is fully browned and any excess liquid has evaporated.

  7. 7

Divide the cooked sweet potatoes among four bowls or meal-prep containers.

  8. 8

Top the sweet potatoes with the cooked beef mince.

  9. 9

If serving immediately, add diced avocado and a scoop of dairy-free cottage cheese to each bowl. Drizzle with hot honey to taste.

Notes

The dairy-free cottage cheese should be prepared before starting and chilled while the other components cook. For an oven method, preheat the oven to 220°C (425°F), spread the seasoned sweet potatoes in a single layer on a lined baking tray, and roast for 25–30 minutes, flipping halfway, until golden and tender. Regular potatoes or roasted pumpkin can be substituted for sweet potatoes. A little hot sauce may be added for extra heat.
