  • 0.333 cup Brown sugar (For the cake)
  • 3 tbsp Light brown sugar (For the cinnamon sugar layer)
  • 1.5 tsp Cinnamon (For the cinnamon sugar layer)
  • 1 cup All-purpose flour (For the crumb topping)
  • 2 tbsp Cornstarch (For the crumb topping)
  • 2 tsp Ground cinnamon (For the crumb topping)
  • 0.333 cup Brown sugar (For the crumb topping)
  • 0.25 cup Granulated sugar (For the crumb topping)
  • 8 tbsp Unsalted butter (Melted; for the crumb topping)
  • 1.5 cup Powdered sugar (Optional vanilla glaze)
  • 1 tsp Vanilla extract (Optional vanilla glaze)
  • Salt (A pinch; for the optional vanilla glaze)
  • 2.5 tbsp Milk (Source specifies 2–3 tablespoons; add gradually to the optional glaze until the desired consistency is reached)

Steps

  1. 1

Preheat the oven to 350°F (175°C). Line an 8-by-8-inch baking dish and set it aside.

  2. 2

In a large bowl, whisk together the eggs, softened salted butter, granulated sugar, and brown sugar. Beat with an electric mixer for 2–3 minutes, until the mixture is fluffy and pale.

  3. 3

Add the vanilla bean paste, sour cream, buttermilk, and baking soda to the egg mixture. Mix until just combined.

  4. 4

Add the cake flour and mix until just combined. Do not overmix.

  5. 5

Prepare the cinnamon sugar layer by mixing the light brown sugar and cinnamon together in a small bowl.

  6. 6

Pour half of the cake batter into the prepared baking dish and spread it into an even layer.

  7. 7

Sprinkle the cinnamon sugar mixture evenly over the batter.

  8. 8

Pour the remaining cake batter over the cinnamon sugar layer and spread it evenly.

  9. 9

Prepare the crumb topping. Mix the flour, cornstarch, ground cinnamon, brown sugar, and granulated sugar together in a bowl.

  10. 10

Add the melted unsalted butter and mix until the mixture becomes crumbly.

  11. 11

Sprinkle the crumb topping evenly over the cake batter.

  12. 12

Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.

  13. 13

For the optional vanilla glaze, whisk the powdered sugar, vanilla extract, and a pinch of salt together in a bowl. Add the milk gradually until the desired consistency is reached.

  14. 14

Let the coffee cake cool, then drizzle it with the vanilla glaze if desired. Serve warm or at room temperature, with or without the glaze.

Notes

The source says to add the cake flour mixture but does not separately describe combining the flour and baking soda; the method above incorporates the listed cake ingredients conservatively. The glaze is optional. Serve the cake warm or at room temperature.
