Ingredients
- 6 C1 egg whites (at room temperature)
- citric acid (a pinch; alternatively, 1 tsp lemon juice)
- 150 g sugar (the author uses half of the total amount of sugar)
- 150 g powdered sugar (the author uses it together with sugar; the total amount of sugar and powdered sugar is 300 g)
- 1 tbsp cornstarch
- almond flakes (for sprinkling)
- 400 g cream cheese
- 100 g 33% heavy cream
- 80 g powdered sugar (for the cream)
Steps
- 1
Make sure the egg whites are at room temperature. Add a pinch of citric acid or 1 tsp lemon juice.
- 2
Beat the egg whites until a thick white foam forms.
- 3
Gradually add the sugar and powdered sugar, one spoonful at a time, continuing to beat.
- 4
Beat until thick and glossy with stiff peaks. With a hand mixer, this takes approximately 10 minutes; in a stand mixer, less time.
- 5
Add the cornstarch and gently fold it in with a spatula.
- 6
Pipe the meringue mixture onto a baking sheet lined with parchment paper.
- 7
Gently smooth the mixture with a spatula, as this side will be the outside of the roll, and sprinkle with almond flakes.
- 8
Bake in a preheated oven using conventional top-and-bottom heat, without convection, at 170 °C for approximately 25 minutes. If necessary, choose a lower temperature for your oven. The finished roll should become champagne-colored.
- 9
Remove the meringue from the oven, cover it with a second sheet of parchment paper, and turn it over.
- 10
Leave the meringue upside down to cool for approximately 1 hour. Remove the parchment only once the roll has cooled completely.
- 11
For the cream, beat the cream cheese, heavy cream, and 80 g powdered sugar until thick.
- 12
Spread the cream over the cooled roll, then pipe the remaining cream on top as a decorative topping.
Notes
The author notes that they use 150 g sugar and 150 g powdered sugar so that no crystals remain in the meringue, which could cause “weeping.” The amount of almond flakes is not specified. The baking sheet size and exact baking time may vary; use the champagne color as your guide.
