Ingredients

  • 1 lb boneless, skinless chicken breast (Boiled and shredded)
  • 6 potatoes (Large; boiled)
  • 0.5 cup carrots (Finely diced and boiled)
  • 0.5 cup bell pepper (Finely chopped)
  • 0.5 cup green onion (Finely chopped)
  • 1 cup mozzarella cheese (Shredded)
  • 1 large egg
  • 3 tbsp cornstarch
  • salt (To taste)
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp chicken powder
  • Serrano peppers (2–3 peppers, finely chopped; optional)
  • 1 tbsp fresh parsley (Chopped)
  • 1 cup breadcrumbs (For coating)
  • 0.5 cup all-purpose flour (For the coating slurry)
  • 0.333 cup water (For the thick flour slurry)
  • oil (For frying; use cooking oil spray if air-frying)

Steps

  1. 1

In a large bowl, combine the boiled potatoes, boiled and shredded chicken, boiled diced carrots, chopped Serrano peppers if using, bell pepper, green onion, egg, cornstarch, salt, black pepper, garlic powder, chicken powder, and shredded mozzarella. Mix thoroughly until the mixture is well combined and sticky.

  2. 2

In a separate bowl, mix the all-purpose flour and water to form a thick paste or slurry.

  3. 3

Place the breadcrumbs in another bowl for coating.

  4. 4

Shape the potato-and-chicken mixture into doughnut shapes and arrange them on a tray.

  5. 5

Freeze the shaped doughnuts for 30 minutes.

  6. 6

Coat each chilled doughnut first in the flour slurry, then in the breadcrumbs, covering the surface evenly.

  7. 7

At this point, the coated doughnuts may be frozen for later use.

  8. 8

For frying, heat oil in a pan over medium heat. Fry the coated doughnuts for 2–3 minutes, flipping them to cook both sides, until golden brown and crispy. Do not overcrowd the pan.

  9. 9

For air-frying, lightly spray the coated doughnuts with cooking oil. Air-fry at 400°F (200°C) for 10 minutes, flipping halfway through.

The source gives both frying and air-frying methods. It does not specify the amount of oil required for frying or instructions for cooking the doughnuts from frozen.
