- 0.5 cup Shredded Manchego cheese (Mozzarella or Chihuahua cheese may also be used)
- 0.5 cup Carrot (Finely grated)
- 0.25 cup Celery (Finely chopped)
- 0.25 cup Corn kernels (Drained if canned)
- 2 tbsp Mayonnaise (To bind the filling)
- 1 tbsp Lime juice
- Salt (To taste; the ham and cheeses already contain salt)
- Ground black pepper (To taste)
- 2 tbsp Fresh parsley (Chopped, for garnish)

Place the softened cream cheese in a bowl. Add the mayonnaise and lime juice, and mix until smooth and easy to spread.

Add the grated carrot, chopped celery, corn kernels, and Manchego cheese. Season with pepper and, if needed, a small amount of salt. Mix until all the ingredients are evenly distributed.

Arrange the ham slices on a clean cutting board. If they are moist, gently pat them dry with paper towels so the filling adheres better.

Place a portion of the filling at one end of each slice. Do not add too much, so the rolls can be closed without the mixture spilling out.

Roll each slice of ham tightly around the filling. Place the rolls seam-side down so they do not open.
