Ingredients
- 1 tbsp olive oil
- 1 medium onion (Finely diced)
- 1 lb ground beef (80/20)
- 5 cloves garlic (Minced)
- 0.5 tsp red pepper flakes
- 1 tsp dried oregano
- 2 tbsp tomato paste
- 25 oz tomato basil pasta sauce
- 28 oz diced canned tomatoes
- 4 cups chicken broth (More may be added for a thinner soup)
- 2 tsp kosher salt (Divided; more to taste)
- 12 lasagna noodles (Uncooked and broken into 2-inch pieces; dried noodles are recommended)
- 0.5 cup heavy cream (Optional; whole milk, dairy-free milk, or coconut milk may be substituted)
- 1 cup mozzarella cheese (Shredded)
- 0.5 cup parmesan cheese (Freshly grated)
- 0.5 cup ricotta cheese
- 6 tbsp fresh basil (Finely chopped)
Steps
- 1
Heat the olive oil in a large pot or Dutch oven and add the finely diced onion. Cook until the onion is soft.
- 2
Add the ground beef and sauté until it is browned all over.
- 3
Stir in the minced garlic, red pepper flakes, 1 teaspoon of the kosher salt, dried oregano, and tomato paste.
- 4
Stir in the tomato basil pasta sauce, diced canned tomatoes, and chicken broth. Bring the mixture to a boil.
- 5
Add the broken lasagna noodles to the pot. Add the remaining 1 teaspoon kosher salt, or more to taste.
- 6
Reduce the heat and let the soup simmer until the noodles are tender.
- 7
Stir in the heavy cream. If desired, add 1 to 2 cups of additional chicken broth to thin the soup. For an extra creamy and cheesy soup, stir shredded mozzarella or Parmesan directly into the pot.
- 8
Spoon the lasagna soup into bowls. Top each serving with ricotta, mozzarella, Parmesan, and fresh basil. Serve and enjoy.
Notes
The structured recipe does not specify the simmering duration or exact cooking temperature. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, though the noodles absorb liquid over time; eating them within 2 to 3 days is recommended. For later leftovers, cook the soup without the noodles. Oven-ready lasagna noodles may become too soft; dried noodles are recommended. The source also provides slow-cooker instructions, but the structured recipe instructions above are the primary stovetop method.
